YUM. Home made Lox. Got the recipe from the excellent cooking blog, Use Real Butter - it's really simple. TIP: When your salmon is "curing" in your fridge, it does need to be weighed down in the dish. We used a clean brick, wrapped up tightly in a few layers of aluminum foil.  We use that brick to weigh down bacon, burgers, etc. Just use new foil every time. ~~ Houston Foodlovers Book Club
