4 strips bacon (cut into 1/2 in pieces) 1 medium onion 1/2 pound kale, (about 8 cups) 4 cups Acorn Squash Puree Coarse salt and ground pepper Cook bacon in medium saucepan. Transfer to paper towel. Add onion to fat in pan, cook 4-5 mins. Add kale, cook until soft 3-4 mins. Add squash puree and 3 cups of water. Bring just to boil. Season with salt and pepper. Serve with bacon on top.
