    Summer Couscous Salad

    Serves 8


    1/3 cup Basil, fresh
    1 pint Cherry tomatoes
    6 Green onions
    1 Lemon, Zest of

    Canned Goods

    2 cups Chicken broth, low-sodium

    Pasta & Grains

    1 1/2 cups Couscous, whole wheat

    Baking & Spices

    1/8 tsp Black pepper
    1/2 tsp Paprika
    1/4 tsp Red pepper flakes
    1/2 tsp Salt

    Oils & Vinegars

    1/4 cup Olive oil, extra virgin
    1/3 cup Red wine vinegar


    1 cup Feta cheese, reduced fat

      Summer Couscous Salad | Mel's Kitchen Cafe - didn't have green onions so I used half of a regular onion-chopped, added some kalmata olives, used two medium tomatoes-chopped because I didn't have baby ones. used 2 tablespoons of lemon juice instead of lemon zest because I didn't have any lemons. Tasted great!!!!

    These carrots are said to be amazing! Roast in the oven at 400 degrees for about 20 minutes with some seasoning and a little olive oil. Then drizzle with about 2 tablespoons of olive oil, 3 tablespoons of honey, and about 1 teaspoon of balsamic vinegar. Pop them back into the oven for about 5 more minutes to achieve sweet, salty, still slightly cruchy perfection!
