Monte Cristo Sandwiches. Amazing stuff. I don't think the pancake batter is necessary - but just dipping the sandwich in egg should do the trick. I would also add a spreading of Dijon and mayo when building the sandwich. Using challah or brioche would make the sandwich fluffier. Variations on the cheese and the side of jam would be fun too - blackberry, currant jelly, cranberry, lingonberry...

Lemon Basil Grilled Cheese Panini | 4 oz shredded mozzarella, 2 oz crumbled feta cheese, 2 tsp grated lemon zest, 2 tsp chopped fresh basil, 1 Tbsp extra-virgin olive oil, 8 slices Italian or sourdough bread | Toss together the mozzarella, feta, lemon zest, and basil. Brush olive oil on two slices of bread. Flip over one slice and top the other side with a layer of the cheese mixture. Close the sandwich with the other slice of bread, oiled side up. Grill two panini for  4 to 5 minutes.
