Lamb Chuanr: Lamb, spice, and a little heat. Tough to pair with a wine...however, I am going with a white wine here. Lamb Kofta Salad...made a few changes because I didn't have certain ingredients: used lime instead of lemon, added 1 tsp oregano, 1 tsp cayenne, 1/2 cup bread crumbs and 1 egg to kofta, x-ed the parsley and added avacado and blue cheese to salad soooooo DELISH!!!
My Chinese teacher once told me that all Beijing expats start out by learning the same three words: nihao, pijiu, and yangrou chuanr - hello, beer, and lamb chuanr. Those three words are the essentials, because that's all you need to know to get a great dinner anywhere in the city, just find the nearest chuanr stand.
