I've been doing this for years. To help not cut all the way through, lay a wooden spoon alongside the potato and cut until you hit the spoon handle. Fan the potato slices out a bit and add olive oil (I sometimes also drizzle a little melted butter too), Italian herbs, Mrs Dash Garlic and Herb, and any others that you like. Bake at 350-400 for about 45 min.
Bacon Potato All you do is peel whole potatoes, cut them all across, not too thin, and not all the way through, sprinkle with some salt, but not too much, the bacon is salty. Then fill with small bacon slices in between. Bake in a pan with some oil until potatoes are fully cooked, and serve!
The most Ah-Mazing Roasted Potatoes! These are so stinkin' easy to make! Cook a pierced potato in the microwave for 6-7 mins. (flip every couple mins.) til soft all the way thru. Cut in half, then into squares (just down to skin). Season with butter, parmesan & Lawry's. Place in oven on aluminum foil-lined pan and BROIL for 10-15 mins.
