      Peppermint Bark Snowflakes My friend Andrea authors one of my favorite blogs "Under a Blue Moon", a regular feature of her blog which I particularly like is called Friday's Favorites in which Andrea shares a collection of intriguing items she has found from around the web. Recently she linked to a treasure of a blog called "Baked by Rachel". Rachel shared this wonderful technique of making Peppermint Bark candy using a silicone food mold. Just like Andrea, I thought this idea was brilliant ~ rather than just breaking the candy into irregular shards. Rachel has an excellent step-by-step tutorial on her blog, complete with photos. (See end of this post for the link.) The process is simple using the typical Peppermint Bark recipe. Choose your favorite type of chocolate; milk, semi-sweet, dark etc., white chocolate, crushed peppermint candies (or candy canes), a small amount of vegetable oil, and a few drops of Peppermint extract. But instead of spreading the chocolate layers on a sheet pan, the melted chocolate is placed in a silicone mold. First the dark layer, then a thin sprinkling of crushed peppermint, and placed in the refrigerator until firm. The melted white chocolate is spread on top of the dark layer and sprinkled with larger pieces of crushed peppermint, then back into the fridge to harden. As soon as the chocolate is firm the candy snowflakes are pushed out of the flexible silicone mold with no problem. As Rachel suggested I used a small cookie scoop to portion the melted chocolate into the molds with a minimum of mess, that worked really well. Something that I found useful was to use a toothpick to swirl through the chocolate in the mold to help move it into the mold's details. Stacked into little cellophane bags, or candy tins I think these would make a great little gift from your kitchen.
