Coconut Quinoa Pudding - serves 4-6: 1/2 c. of quinoa, 1/2 of a vanilla bean, 1/5 cup of sugar (sub stevia?), 1 19 oz. can of coconut milk, and pinch of salt. Optional: top with berries and/or chopped toasted nuts.
Quinoa with Asparagus and Preserved Lemon Dressing
This was the first time I've ever tried chia seeds, and they are pretty awesome. Another superfood with all it's omega 3s, calcium, fiber, and protein...chia seeds are definitely something I'll start adding to more and more things. The seeds expand to three times their size in liquid (ours took more than the 2hours though), so you get a gel-like texture of the milk, and it tastes like pudding. The cinnamon vanilla flavor was good, but not terribly strong. (Cinnamon-Vanilla Chia Seed Pudding)
Cilantro Lime Quinoa - I have been a little shy of making quinoa because it looked so darn healthy and a little bland. I stand corrected. Followed this recipe to the letter. It's very tasty. The texture is great. Enjoy!
