Ingredients: 4 cups ice 1 cup chilled pineapple juice 1/2 cup blue curacao 1/2 cup rum 1/2 cup cream of coconut 4 pineapple slices 4 maraschino cherries Directions: Place the ice, pineapple juice, blue curacao, rum and cream of coconut into a blender and puree until smooth. Divide evenly among 4 glasses and garnish each with a pineapple slice and a cherry.
Lime Sherbet Margaritas.1 pint lime sherbet, Juice of 2 limes, 1/3 cup powdered sugar, 8 ounces tequila, 4 ounces triple sec, 2 cups ice cubes. Put all ingredients in blender, and blend until frothy. Serve immediately. Makes 4.
Coconut Rum Soaked Pineapple 16 oz Coconut Rum 1 Fresh Pineapple, peeled & cored Cut Pineapple into bite size chunks. Place in medium bowl & Pour Coconut Rum over Pineapple. Cover & Refrigerate approx. 24 hours. Drain, reserving Rum. Serve pineapple in tropical flavored cocktails or as an alcoholic appetizer. The reserved Rum can be served alone or with additional Pineapple Juice
