    Paleo Omelet Muffins! Made these this morning. Got it ready the night before so all I had to do was add the mixture to the muffin pan and bake it when I got up this morning. I used 9 eggs and added cooked sausage, shredded zucchini, yellow squash, red bell pepper and yellow onion, along with avocado and it made 12 muffins. Be careful not to overcook! 2o minutes is perfect!

Potato & Omelet Breakfast Muffins - very delicious, without meat each muffin is less than 100 calories, and it's hard to stop with just one. Especially as I was making these the night ahead to store. Would be excellent with any breakfast meat, kielbasa, or even chicken. I actually think these make a lovely night time snack. Mine need to be reheated in the microwave 55 seconds from frozen.
