      Vegetarian Korma - Mildly spicy, this simple Indian recipe is rich, creamy, and loaded with vegetables like potatoes, carrots, green peas, and bell peppers. Curry powder, jalapeño pepper, garlic, and ginger add just the right amount of spicy kick to the tomato and heavy cream sauce. You can substitute the cream with coconut milk or light coconut milk if you prefer. Serve with naan and basmati rice.

      Vegetarian Korma I Consider double or tripling the sauce and the cashews (roughly chopped) and substituting coconut milk or light coconut milk for the heavy cream for a more traditional flavor. Also, par boil/steam/microwave the potatoes (recommend Yukon) and carrots, add the curry to the oil before cooking the onion, and don't hesitate to experiment with additional spices like garam masala, turmeric, cardamom, cinnamon, cumin, cloves, etc.

      Vegetarian Korma this took me a LONG time to make, because I did it all as I was reading along...and it takes a hellalong time to soften the potatoes, but definitely WORTH IT. Authentic taste, (so I'm told). Substituted curry with garam masala, and added turmeric. My FIRST Indian dish, and I made it with the coconut burfi for dessert. I made it last week and my fiance is still bragging about it to his friends.
