Hot Mozzarella Caprese dip RECIPE: Hot Caprese Dip serves 2-4 10 ounces fresh mozzarella, chopped into cubes 2 roma tomatoes, seeded and juiced 3 tablespoons freshly chopped basil (or about 1 tablespoon dried) + more for garnish Preheat oven to 375. Make sure tomatoes have as much juiced squeezed out of them as possible – this will prevent the dip from becoming soupy. In a small baking dish, combine chopped cheese, tomatoes and basil and mix. Bake for 15 minutes, then broil for 2 minutes so cheese becomes bubbly and golden. Serve immediately with crackers or melba toasts. Note: dip may appear “watery” which is why it is VERY important to get as much moisture out of the tomatoes as possible. Also make sure dip is consumed immediately, as the longer it sits, the more juice that develops. Don’t worry if there is a little bit of juice – it is still delicious!
This was REALLY good! Ended up having leftover chicken so I diced it up cut up some tomatoes tossed it with some newmans own olive oil and vinegar salad dressing and topped it with a little shredded mozzarella veggies shreds & packed it for James' lunch! Also really yummy. Although he said it didn't sit well with his stomach, but it was good going down :)

Balsamic Grilled Bruschetta Chicken 4 boneless skinless chicken breasts, thawed (I use the big Costco bag) Pinch of salt ¼ Cup balsamic vinegar ¼ Cup extra virgin olive oil 8 slices fresh mozzarella cheese 4 Roma Tomatoes, seeded and diced 8 fresh basil leaves, stacked, rolled and thinly sliced into chiffonade 3 cloves fresh garlic, minced Pinch of salt 1 Tablespoon balsamic vinegar

Fig Flatbread Fresh Fig and Stilton Flatbreads – makes 2 •1 piece regular or whole wheat premade flatbreads, pizza crust or puff pastry (baked per the instructions). •4 tbsp. fig preserves •10-12 fresh Mission or Brown Turkey figs – thinly sliced •4 ounces good quality, crumbled goat cheese, blue cheese or Gorgonzola here •4 sprigs fresh thyme, leaves removed from tough stems - Preheat oven to 350. Place the two pieces of bread on a baking sheet and bake until it begins to barely crisp – 2 to 3 minutes. Remove from oven and allow to cool to the touch. Spread 2 tbsp. of jam on each piece of bread. Even distribute the sliced figs over the bread. Top each with 2 ounces of crumbled cheese and evenly sprinkle on the thyme leaves. Bake until crispy and the cheese has melted – this took 5 to 6 minutes in my oven. Cut into rough pieces and serve while still warm.
