Portobella Pizzas  4 tomatoes, diced 4 large portobellas, stems removed 4 cloves of garlic, chopped 1 lemon 1 leek, chopped 1 onion 5 leaves fresh basil, chopped Parmesan cheese fresh parsley 2 T. olive oil salt  Brown onions in oil. Add tomatoes, garlic, leek, & pinch of salt. Saute until tomatoes are soft. Add 1 tablespoon lemon juice & basil.  Place the mushrooms on oiled baking sheet with the bottom side up. Top with mixture and cheese. Bake for 12 minutes at 400F. Sprinkle with parsley.

HEALTHY SEVEN LAYER DIP - Ingredients: 2 cups chopped romaine lettuce, 2 avocados mashed well, 1 cup low-fat Greek yogurt, 2/3 cup black beans, 1/2 cup diced tomatoes, 1/2 cup lowfat shredded cheese, sliced black olives and scallions to garnish. Try adding taco seasoning to yogurt.
