Cheesy Ranch Potato Bake - You could easily add meat (ham?) to it and eat it for a main dish casserole. Also, could possibly try swapping out the ranch for sour cream and add some garlic for an entirely different flavor.

Buffalo Chicken Quinoa Salad from Half Baked Harvest! Used canned buffalo chicken added celery, didn't have avocado or cabbage but would be good with it probably. Also didn't have crumble blue cheese. Used a bit of creamy blue cheese.
