Texas Ranch Potato Salad. Love potato salads, but not the calories :) so, for a skinnier (and healthier) version, I opted-out of cheddar and upgraded the dressing: no sour cream and mayo, just low-fat yougurt with a dollop of mustard + a bit of ground paprika, fresh chopped parsley, smashed garlic and a bit of salt instead of the dry ranch mix. Result - yumm!
My sister-in-law makes this and it's SOOO very good. Bacon-Ranch Potato Salad: Mix 2/3 cup mayonnaise, 1/4 cup buttermilk, 2 tablespoons cider vinegar, 1 minced garlic clove, 1/2 cup chopped celery, 2 chopped scallions, 1 teaspoon sugar, and salt and pepper. Toss with 2 pounds boiled cubed red potatoes. Top with 6 slices cooked bacon, crumbled.
