Quinoa, Black Bean, and Mango Salad

Quinoa, Mango & Black Bean Salad is a beautiful colorful & healthy salad that not only looks fantastic but is loaded with protein, fibre and amino acids. If you have never tried quinoa try this salad! Phase 3 without mango. Phase 1 w/o oils.

This is one of my favorite things to make with quinoa.  I make "the quick method" and don't actually fry it.  I use egg beaters.  You can experiment with different sauces and it's so quick and easy for lunch.  One trick I do is make the quinoa and then put it in my pyrex bowl.  Put the frozen veggies and onion on top and then put the lid on.  They cook from the steam.
