Mini-Cheesecakes - these are so cute and always a hit at gatherings. They are like a mini cherry cheesecake. I can't find the mini Nilla wafers here so I either make them in a bigger cupcake paper or I make my own crumb bottom by crushing the wafers (or using graham crumbs), mixing with butter and packing them in the bottom.
