Breakfast Cookies: 3 mashed bananas (ripe), 1/3 cup apple sauce, 2 cups uncooked quick-cooking oats, 1/4 cup skim milk, 1/2 cup raisins (or any other dried fruit of choice), 1 tsp vanilla, 1 tsp cinnamon & 1 tbsp sugar or other sweetener.  Preheat oven to 350 degrees. Mix all ingredients in a bowl really well. Let this mixture stand for at least 5 minutes to let the oats become good & hydrated. Heap the dough by teaspoonfuls onto a greased cookie sheet. Bake for 15-20 minutes & let cool.

Sliced banana sautéed in honey & coconut oil with a sprinkle of cinnamon. Great healthy sweet treat.

Fried bananas, honey and cinnamon! Spray skillet w/coconut oil, add 1 sliced banana, fry on both sides. Add honey mixed w/TBS of water and cinnamon(to your taste) over top of bananas.

For breakfast? Blueberry Banana Oat Cakes 1 ripe banana, mashed cup dry oats 1 teaspoon cinnamon cup blueberries (fresh) Dash of organic vanilla extract. PS: no need to add the brown sugar, the banana is sweet enough!

Protein Pancakes:Mix 4 egg whites, 1/2 cup of rolled oats, 1/2 cup of low-fat cottage cheese, 1/8 teaspoon of baking powder, and 1/2 teaspoon of pure vanilla extract. Cook for 60 seconds each side.

Silver Dollar Protein Pancakes: Mix 4 egg whites, ½ cup of rolled oats, ½ cup of low-fat cottage cheese, ⅛ teaspoon of baking powder, and ½ teaspoon of pure vanilla extract. Top with fresh berries or sliced banana. I had to make myself stop eating them.
