Loaded Spinach Salad - Ingredients: 8 hard-boiled eggs, 6 c fresh baby spinach, 4 tbsp blue cheese dressing, 1 can beets, 1 c shredded carrots, 2 tbsp chopped toasted pecans. Prep: Peel the eggs, discard 6 of the yolks, chop the remaining yolks & whites. Toss spinach with 2 tbsp dressing in a large bowl. Divide between 2 plates. Top with chopped eggs, beets, carrots and pecans. Drizzle with the remaining 2 tbsp dressing. Serves 2.
