Pumpkin Butter 1 (29 oz) can pumpkin 3/4 cup apple juice 1.5 t ground ginger 1/2 t ground cloves 1 1/3 c sugar (or brown sugar) 1 T ground cinnamon 1/2 t ground nutmeg Juice of half a lemon Combine pumpkin, apple juice, spices, and sugar in a large saucepan and stir well. Bring to a boil. Reduce heat and simmer, covered with lid ajar, for 35-45 minutes, stirring frequently. Remove from heat, adjust spices to taste. Cool and store in fridge in air tight container for up to 3 weeks
Pumpkin Butter. MAKE THIS. Seriously. It's the best-tasting vegetable thing you've ever had in your mouth. It's good on everything (in oatmeal, plain yogurt, granola, pancakes, cookies), and it's fat free, gluten free, vegan. I made mine with regular old canned pumpkin, apple cider, local honey, and fresh grated ginger. HEAVEN. Try using it to replace half the butter in your baking recipes! Takes less than half an hour on top of the stove.
