Greek Yogurt Banana Bread - i've been wanting to make this forever..even though its the dead of winter, i found the strawberries and followed through. I did one thing differently: I didn't have a loaf pan so I made cupcakes. Anyway, this is a great recipe! Its great for a quick snack or breakfast on the go. Also it makes me feel healthy with the strawberries and Greek yogurt.
Greek Yogurt Pumpkin Banana Bread (1 hour 10 mins: 1 C all-purpose flour, 3/4 C whole wheat flour (or all-purpose flour), baking powder, baking soda, salt, cinnamon, ginger, nutmeg, cloves, 3/4 C brown sugar, 1 C pumpkin puree (store bought), 2 large over-ripe bananas, 2 eggs, 1/2 cup Greek yogurt, and optional: 1 C pecans toasted and coarsely chopped)
