Mini Spinach Egg Muffins: 2 eggs, 1 c. baby spinach chopped, 1 T. real bacon bits, 1 T. grated parmesan cheese, salt & pepper. Preheat the oven to 375 degrees. Whisk the eggs and spinach with a pinch of salt and pepper. Using a tablespoon dollop the egg spinach mixture unto 8 mini-muffins. Sprinkle the Parmesan cheese on top and bake for 10-12 minutes.
