      QUINOA. Known as a "Superfood" is perfect. High in protien and fiber, it has more protein/ounce than meat AND has beneficial vitamins and nutrients most vegetarians find difficult to get into their diets, including all 8 essential amino acids. Most think it's a grain but although it acts like a grain, it's a seed. A great substitution for pasta or rice. #Quinoa #eatKeenwaKrunch #Superfood

      best quinoa recipe: Quinoa with Caramelized Onions and Carrots Quinoa with Caramelized Onions and Carrots 1 tablespoon extra virgin olive oil 1 cup chopped onion 2 carrots, chopped 1 cup quinoa 2 cups low sodium vegetable broth 2/3 cup chopped walnuts 1/4 cup chopped fresh parsley Heat the oil over medium-high heat. Cook the onion with a pinch of salt on medium low heat for about 30 minutes- until brown and caramelized. Add carrot and cook for 3 minutes more. Stir in the quinoa and vegetable broth, bring to a boil. Reduce heat and simmer, cover and cook 15 to 20 minutes. Fluff with a fork and stir in the parsley and walnuts. Season to taste. Serve warm or at room temperature.

    The Loaded Bowl- quinoa, black beans, tomatoes, cilantro, avacados. My advice for this recipe is to double everything but the quinoa. 3 cups of uncooked quinoa makes A LOT of cooked quinoa leaving not enough tomato, black bean, and avacado. It makes a huge batch so if you dont want left overs half the quinoa or even do just 1 cup and the given portions of everything else. It is a DELICIOUS recipe!

    Crockpot Quinoa Chili. I made this 10/2013. This recipe was super easy, and it made a ton of food. I doubled the spices, added a chopped bell pepper, and used fire-roasted diced tomatoes and tomatoes with hot chilies to spice it up. (Still not too spicy with the other ingredients to tone it down.). Topped with cheddar or Romano cheese. I will definitely make this over and over again.
