From Krista - parmesan spinach quinoa - LOVE! Very good but I would add a lot more spinach next time. I also tried this with kale, but I prefer spinach. You can also add veggies - I added grape tomatoes and zucchini!

Made the Lemon Quinoa Cilantro Chickpea Salad. Only we couldn't find quinoa at the store so subbed barley. which was a pretty tasty substitution and used parsley instead of cilantro because my seester can't stand the taste of cilantro.
