chickpea curry - I changed this a lot, but you've got to give them credit for using chickpeas, which I loved. Okay, this will be gross if you use coconut yogurt. Use coconut milk instead. I also added a can of tomatoes, a small can of tomato sauce and 3tbsp sugar. THEN it was delicious! You could also do coconut milk with pureed mango for a delicious curry as well.
Eating this as I type! It's pretty easy to make and very tasty. The recipe is so basic that you could change it up - I'm thinking about adding onion next time. I also used quinoa instead of rice and regular plain yogurt instead of soy yogurt made with coconut milk. Happy eating!
vegetable and chickpea curry crockpot This was great! I used chicken broth extra garlic, ginger and currey didn't add red pepper flakes, green beans or lemon wedges, I used regular coconut milk. I also just made in on the stove top. Next time I would like to try a green curry instead of the red.
