"Want an amazing and healthy side dish. Marinate thick sliced tomatoes with balsamic vinegar for 1 hour. Bake at 350 for about 7 minutes or a little tender. Meanwhile, sauté spinach and garlic with a dash of salt and lemon juice. Put spinach on top of tomatoes and sprinkle with low fat cheese of your choice (I chose Italian blend) and broil til cheese is golden!"

Baked Pasta with Sausage, Tomatoes and Cheese- this is my very favorite ziti recipe in the world. I use hot turkey or chicken sausage from Whole Foods as they will just give it to me without the casing, which is easier. I use frozen basil that I find at Kings when I don't have any fresh on hand. Even better leftover!

Incredible Baked Meatballs. 1lb hamburger, 2 eggs, beaten with 1/2 cup milk, 1/2 cup grated Parmesan , 1 cup panko or bread crumbs, 1 small onion, minced, 2 cloves garlic, minced, 1/2 teaspoon oregano, 1 teaspoon salt, freshly ground pepper to taste, 1/4 cup minced fresh basil Mix all ingredients with hands. Form into golfball sized meatballs. Bake at 350 degrees for 30 minutes.
