Stuffed Peppers. This is one of our favorite dinners! I bake the peppers on a cookie sheet first. Cut them in half, place them open side down on a cookie sheet, spray with a little olive oil add a touch of salt n' pepper and bake for 12-15 minutes (keep checking so they don't burn. Take out and fill with the meat/veggie filling and bake for 7 more minutes with cheese on top!

*Spinach Feta Stuffed Peppers. I used Far East Quinoa Rice. Doubled the entire recipe, splitting between 7 bell peppers of varying sizes. Skipped the asparagus for a little extra corn and spinach. Mixed about 1/4 cup feta in with the filling rather than on top. Roughly 3p+ per pepper. 125 cals.

Serves 4 / 7 points per serving (2 stuffed pepper halves) Nutritional Info: 256 cal 8g Total Fat 2g Sat Fat 0g Trans Fat 8mg Chol 504mg Sod 37g Carb 3g sugar 8g Fiber 12g Protein 251 mg Calc Ingredients: 1/2 cup quinoa, rinsed 2tsp olive oil 1/2 cup chopped sweet onion 1 medium tomato, chopped 1 cup fresh or frozen corn kernels, thawed 1 tbsp plus 1tsp chili powder 1/2 tsp ground cumin 1/4 tsp salt 1 cup canned black beans, rinsed and drained 4 large poblano peppers, halved lengthwise and seeded 1/4 cup water 1.2 cup shredded low fat mexican blend cheese (I used WW mexican blend) Preheat oven to 400 degrees F. Spray baking dish with nonstick spray. Cook quinoa according to package directions. Fluff with fork. Pour liquid from tomatoes in bottom of baking dish. 4. Fill each bell pepper half with heaping 3/4-cup quinoa mixture, and place in baking dish. Cover with foil, and bake 1 hour. Uncover, and sprinkle each pepper with 1 Tbs. remaining cheese. Bake 15 minutes more, or until tops of stuffed peppers are browned. Let stand 5 minutes. Transfer stuffed peppers to serving plates, and drizzle each with pan juices before serving.

Remove the peppers from the oven and allow to cool until you can handle them. *****Note – make sure you cook your turkey ahead of time that way you do not have to worry about it later. Also, I sauteed the onions until cooked thru, I then added in my cooked rice, black beans and corn. In a bowl add the taco seasoning, cooked ground turkey, chopped onions, black beans, corn and rice. Add in the jar of salsa and mix well. Carefully spoon the turkey mixture into each half of the bell peppers and place back into the baking dish. Cook the peppers for another 15-20 minutes or until the peppers are cooked all the way thru. Before removing from the oven sprinkle the tops of each pepper with shredded cheddar cheese. Place back into the oven just until the cheese has melted. Remove from the oven and top with fresh cilantro, avocado slices and/or sour cream just before serving. ***** UPDATE – So since this recipe posted I became a vegan. For me the filling I use is brown rice, b lack beans (or quinoa) the peach mango salsa, maybe throw in some sauteed zucchini, squash, carrots, mushrooms etc that have been very finely chopped. I top them with daiya pepper jack shredds and toffuti sour cream. STILLLLLLL delish!

Roasted Red Pepper Pesto: 7oz jar roasted red peppers. Half cup walnuts. 3 clover garlic. Quarter cup olive oil. Half tsp salt.third cup parm. Pepper to taste. Squeeze moisture from peppers. Put all but cheese in food processor. Process until very smooth. Stir in cheese. To serve on 1lb pasta add quarter cup pasta water to thin out to desired consistency.
