    *Spinach & Feta Stuffed Peppers. I used Far East Quinoa & Rice. Doubled the entire recipe, splitting between 7 bell peppers of varying sizes. Skipped the asparagus for a little extra corn and spinach. Mixed about 1/4 cup feta in with the filling rather than on top. Roughly 3p+ per pepper. 125 cals.

    southwestern stuffed bell peppers (These were pretty good and fairly easy to make; I had leftover filling and only used half the amount of salsa)

    Savory, delicious, easy to substitute for what veggies/herbs I have around. Would double the recipe though, especially if serving as a main dish.

    Quinoa stuffed peppers - vegetarian. These turned out pretty good - but I think they need more spices next time around.
