5 out of 5 stars. Smitten Kitchen Banana Bread. Makes one loaf. Great flavor and texture. Will make again. UPDATE: have made several times; this works as a loaf pan, mini muffins and regular cupcake size. Just adjust baking time, for each (the smaller the size the less baking time). I kept the temp the same. GREAT RECIPE!
Zucchini bread by smitten kitchen | use gluten-free flour and substitute a heaping teaspoon of stevia (google stevia/sugar conversion) or the clean sweetener of your choice for the 1 3/4 cups sugar. I made this with stevia and might try honey and dates next time.
