Slice tomatoes crosswise & season with salt & pepper. Saute crushed garlic, olive oil & fresh thyme until golden. Add some parmesan cheese and remove from heat. Grilled Zucchini Pizza - 9-25-13 I made this for hubs and me last night after the kids went to bed so we could have a low-carb treat. I ended up cutting the ends off my zucchinis, slicing off the outer edge on two sides to allow for flat slices, and then cut each zucchini into three lengthwise slices and broiled until softened. I then added the toppings and broiled again to get the cheese bubbly. YUM!
This is our favorite way to eat broccoli or cauliflower of all time! My husband says he would rather eat this than fries. I put a few Tbsp of olive oil in a ziploc with some salt and pepper and the broccoli and shake. Then spread on a cookie sheet and spread minced garlic over it and roast at 425 deg F for 20-25 minutes.
