Now it is my "go to" dish for taking to people who have had babies, surgery, etc. 4-6 raw chicken breasts, new potatoes, green beans (fresh or canned-really any green veggie would work. Broccoli is good, too). Arrange in 9x13 dish. Sprinkle with a packet of Italian dressing mix and then top with a melted stick of butter. Cover with foil and bake at 350 degrees for 1 hour. Enjoy!

Simple Green Beans, Chicken & Potato Dish--This is good and oh so easy. Even Caoimhe loved it. Next time, I would mix the Italian Dressing Mix with the melted butter, I think it would disperse better. The chicken was very moist and tender. I did par-boil the potatoes before adding to the dish!

Italian Chicken Potato and Green Bean Bake. I'll replace the green beans with something, and some of that butter with olive oil...but interesting idea, eh? 1 row cut potatoes, next to 1 row of chicken breasts, next to 1 row of vegetable. recipe calls for 3/4 stick butter & 2 italian dressing seasoning packets. Cover with foil. Bake in an hour on 350.
