Raw Corn Chips 3 C Corn 1/4 Onion 1/2 T paprika 1/2 t. cayenne a pinch or two of Celtic Sea Salt Place all ingredients in a food processor and blend until smooth. Spread on a teleflex sheet on dehydrator tray. Score the mixture before you start to dehydrate. Dehydrate 12 hours, flip and dehydrate until fully dry and crisp. Break apart at score lines. Makes one sheet. This recipe can easily be doubled.
Kale and Cabbage Salad - This salad is fresh, tasty, healthy and keeps beautifully! The best part is that it has so much going on, it easily makes a satisfying meal. Full of nutrient dense kale and cabbage, pumpkin seeds and dried cranberries, you can really sink your teeth into this one.
Raw Avocado Kale Pesto. I am including this recipe because I love the idea of such a healthy 'pesto' with avocado and kale, but also to remind you that you can make your own noodles. If you don;t have a spiraliser (must get one!), just make flat 'noodles' with your normal peeler.
Oven at 300*, cook for 30-40min. Toss thickly sliced zucchini in olive oil. In another bowl, combine parmesan cheese, bread crumbs, and a few turns of pepper. Coat zucchini, bake until browned & crisp. Serve hot! For salt and vinegar, soak slices in vinegar for 1hr and sprinkle with salt. Chipotle powder or curry powder for other flavors.
