A Cup of Coffee Cake (in Under Five Minutes) | Prudent Baby Tried 10-4-12: took me more than 5 min but still pretty quick. Things I'd do differently...might add a pinch of salt; didn't realize the topping was supposed to be stirred into batter & not just put on top - next time stir into batter. In my microwave it took closer to 2 1/2 min to cook. Fun recipe! Will try again...

Microwave coffee cake in coffee cup. This appeals to me much more than the chocolate mug cake, which often gets bad reviews.

Microwave coffee cake in a cup, just tried it and it's not bad! Nice way to have an afternoon snack in a single serving size. I would probably add a pinch of salt next time. Make 2 cups to use all the egg. Might sub plain or vanilla yogurt if you don't have sour cream.
