Bring to a boil. in small bowl, combine 3/4 cup water & 1 heaping tablespoon cornstarch and add to peach mixture. Return to boil. In mixing bowl, combine 1-1/2 cups sugar, 1-1/2 cups self-rising flour, 2 teaspoons vanilla and enough milk to make a thin batter. (a little thinner than a pancake batter). Pour hot peaches into pan with melted butter, and pour batter all over peach mixture. Top with cinnamon/sugar mixture, (1/2 cup sugar, 1/2 tsp cinnamon) and bake for 30 minutes or until golden brown.

Make the cakes: Brush four 1 1/4-cup brioche molds (or use 10-ounce ramekins or jumbo muffin cups) with the 2 tablespoons melted butter. Dust the molds with cocoa powder and tap out the excess. Whisk the flour, baking soda, baking powder and salt in a small bowl. Bring the milk and 3/4 cup water to a simmer in a saucepan over medium heat; set aside. With the mixer on low speed, gradually beat in the flour mixture, then the hot milk mixture. Finish mixing the batter with a rubber spatula until combined. Divide the batter evenly among the molds, filling each slightly more than three-quarters of the way. Transfer the molds to a baking sheet and bake until the tops of the cakes are domed and the centers are just barely set, 25 to 30 minutes. Transfer the baking sheet to a rack; let the cakes cool until they pull away from the molds, about 30 minutes. How To Assemble the Cake: Make the Filling: Microwave the chocolate, cream, butter and corn syrup in a microwave-safe bowl in 30-second intervals, stirring each time, until the chocolate starts to melt, 1 minute, 30 seconds. Let sit 3 minutes, then whisk until smooth. Reheat before using, if necessary. Use the tip of a paring knife to gently loosen the cakes from the molds, then invert the cakes onto a cutting board. Use the knife to cut a 1 1/2-inch circle on the top of each cake, cutting almost to the bottom. Hollow out the cake with a spoon; save the scraps. Wrap the cakes with plastic wrap and microwave until steaming, 1 minute. Drizzle plates with caramel, then unwrap the cakes and place on top. Pour about 3 tablespoons filling into each cake. Plug the hole with a cake scrap. Save or discard any remaining scraps. Top each cake with a scoop of ice cream. Spoon more chocolate sauce on top, spreading it thin so it hardens into a shell.

Best cupcake/cake batter recipe ever! Super easy too white wedding cake cupcakes Yield: 36 cupcakes Prep Time: 15 min Cook Time: 18 min I'm not usually one to use a boxed cake mix and doctor it up. I'm more accustomed to using entirely homemade recipes, but this one caught my eye and looked good. These turn out delicious, moist and fluffy cupcakes- perfect for holding buttercream frosting. Ingredients: 1 (18.25 ounce) box white cake mix 1 cup all-purpose flour 1 cup granulated white sugar 3/4 teaspoon salt 1 1/3 cups water 2 Tablespoons vegetable or canola oil 1 teaspoon vanilla extract 1 cup sour cream 4 large egg whites Directions: 1. Preheat oven to 325°F. Place cupcake liners in cupcake pans (you'll need approx. 36). 2. In a large bowl, whisk together cake mix, flour, sugar and salt. Add remaining ingredients and beat with hand mixer for 2 minutes, or until well blended. 3. Use ice cream scoop to fill prepared cupcake tins- fill about 3/4 full. Bake about 18 minutes, or until toothpick inserted in center comes out clean. Tips: *Recommend: Duncan Hines "Moist" White Cake mix for this recipe. *You can use either regular or light sour cream for this recipe, but heck... since it's a wedding cupcake and you want it to be as delicious and moist as possible, I recommend going for the full-fat kind. *Add 1 teaspoon of almond extract (in addition to the vanilla) if you wish to have a different flavor. *Using an ice cream scoop is perfect for getting the batter into the cupcake tins without spilling. *You can also use this mix to make cake. Slice a 1/4-inch piece from the top of each cone and reserve to place back on the filled cupcakes. Spoon about a teaspoon of strawberry gelée filling into each cupcake and top with the cone top. Using a pastry bag or an offset spatula, frost tops of each cupcake with the strawberry mascarpone frosting. Strawberry Gelée Ingredients: 1 cup strawberry puree 1/4 cup sugar 1 tablespoon lemon juice 2 tablespoons cold water 1/2 envelope unflavored powdered gelatin 1/2 cup diced, fresh strawberries Directions: Heat puree and sugar in a small saucepan just until it begins to bubble, stirring to dissolve sugar.  Stir in lemon juice and remove from heat. Put water in a small bowl and sprinkle gelatin on top. Let sit for 5 minutes. Add fruit puree mixture to the bowl and stir until gelatin is completely dissolved. Stir in diced strawberries and chill until set. Strawberry Mascarpone Frosting Ingredients: 1/4 cup softened butter 1 8 ounce container mascarpone, at room temperature 1/2 cup fresh strawberries, pureed 2 tablespoons strawberry jam 4-5 cups powdered sugar Directions: Cream butter and cream cheese in an electric mixer until soft and fluffy, about 2 minutes. Add the strawberries and jam. Mix until combined. Add the powdered sugar, 1 cup at a time until the frosting has the sweetness and consistency you desire.  If your frosting is not stiff enough to pipe, add more powdered sugar. Use right away, or refrigerate until ready to use.

Volcano cookies 1 cup butter, room temperature 1 cup brown sugar 1/2 cup granulated sugar 2 eggs 2 teaspoons vanilla 1 teaspoon baking soda 1 teaspoon kosher salt 2 1/2 cups all purpose flour 1 1/2 cups semi sweet chocolate chips 18-20 unwrapped milk chocolates, I used Dove Preheat oven to 350 Spray your muffin top pan generously with cooking spray. Set aside. In your stand mixer, cream together butter and both sugars until light and fluffy. Add in your eggs, one at a time and vanilla. Mix on medium until combined. Turn mixer to low and add baking soda, salt and flour. Stir until just combined. Stir in your chocolate chips and mix until incorporated. Press 1/4 cup dough into each cavity in the pan. Press 2 unwrapped chocolates in each cookie. Cover the chocolates completely with 1/8 cup more batter. Bake approx 12 minutes until edges are golden. Let cool in pan 11-13 minutes. Gently loosen sides with knife and twist out, or flip pan over onto cooling rack to remove cookies. Repeat with remaining dough. Makes 9-10 deep dish cookies. Serve warm. Top with ice cream. To reheat cookies, place on a microwave safe plate for 15 seconds. If you don’t have a muffin top pan, you can still make these cookies. Just wrap your cookie dough around 1 of the chocolates and bake on a parchment lined baking sheet for 8-9 minutes.

3 ingredient nutella brownie bites... *Becca says: THESE ARE AMAZING!!!!!!!!!!!!!!!!!!! Since it was only three ingredients it was easy to calculate calories. If the batch you makes fits into 12 muffin cups that's roughly 170 calories per brownie. Also, I ended up having to bake them for 13-15 minutes rather than 12 minutes as it states. And they were still chewy and fudgy.

Variations You can use any flavor combination you would like. Coke or Dr. Pepper would be great in a chocolate cake mix. Orange Soda, Mountain Dew, Sprite, Root Beer would all be fun to try too.
