      What it is: Founded by the cardiology king Dr. Atkins, this diet reigns among all things low-carb: Atkins 20 (the traditional plan) has you eating a total of 20 "net carbs" (total carbs minus the fiber and sugar alcohols in foods), while Atkins 40 has you eating 40 "net carbs" to provide a slightly more liberalized plan. Pros: Immediate weight loss, for one! We store carbohydrates in the form of glycogen. When we cut carbs dramatically, our body will use that storage of glycogen to breakdown and stabilize our blood sugar. When glycogen breaks down, we also lose water that's been stored in our muscles … hence the reason why people tend to see results right away. Cons: Here's the problem with a quickie loss of water weight: It's just water, which means that you can just as easily put the weight back on — especially when you're dreaming about muffins, bagels, and pasta. Plus, eliminating any food group puts you at risk for overdoing it on any of the others. And since all weight loss diets work on the same principle of calories in, calories out, your weight will ultimately remain stagnant unless you reduce calorie intake overall. The bottom line: I see more benefits in the new Atkins 40 Plan, because it emphasizes a lower intake of carbs from processed foods, while promoting starchy veggies and fruit.
