Spinach. Made a version of this, which will be a new staple for us. Blanch 1/2 large bag of spinach (5 seconds in boiling water), transfer to iced water, drain, add 1 tb sesame oil, 1.5 tb soy sauce, 1/2 tb sesame seeds. Simple, healthy, yummy. I use a strainer pot, which makes it a lot easier to get the spinach out of the boiling water quickly. I will try with shrimp flakes, but tastes good even without them.
