Healthy Mac and Cheese 1-pound box whole wheat macaroni, penne or rotini 3 tablespoons butter, cubed 1/4 cup milk 1/2 cup homemade sweet potato puree or 4 oz. store-bought sweet potato baby food puree 2 cups cheddar cheese Salt and pepper to taste Cook pasta according to directions. Drain and pour back into the stock pot. Add the remaining ingredients. Stir and enjoy immediately.
Mac and beer cheese. One pinner said, "Last night I made this with Sam Adams Coastal Wheat, oregano instead of thyme, and cayenne instead of paprika. Next time I'll probably dial down the smoked cheddar, but it stood up to the whole wheat pasta well. I'm looking forward to making this again!"
