Walking tacos - excellent idea! I wouldn't even go to all the trouble of the recipe with all 18 ingredients.  I'd just get a packet of taco seasoning, beef, then use lettuce, tomatoes, cheese, jalapenos, and put your fixings in the bag with the fritos and let it rip!
