Cowboy Caviar: 1 can black eyed peas, drained and rinsed, 1 can black beans, drained and rinsed,1 can shoepeg corn, drained and rinsed, 4-5 Roma tomatoes, seeds removed and diced, 2-3 diced avocados, ripe but still firm, 4 green onions, sliced thin (I used 1/2 purple onion diced finely because that's all I had), around 1/2 to 3/4 cup Zesty Italian dressing, 1/2 bunch cilantro, chopped finely,1-2 limes, ground pepper, and salt to taste!
1 can black beans, drained and rinsed 1 can sweet white corn, drained and rinsed 2-3 roma tomatoes, diced 2 extra large avocados (or 3 regular), diced 1/2 bunch cilantro, finely chopped 1/8 cup lime juice, more to taste salt to taste Toss everything together in a large bowl, do not over-mix. Serve with tortilla chips.
Clean Eating Cilantro Salsa (All ingredients are an approximate measure. Adjust to your liking.) Ingredients: 5-6 small-medium tomatoes 4 small garlic cloves (or two large ones) Peppers (choose the type & amount based on how spicy you like your salsa) Cilantro (about 1/2 cup chopped, but again, use to your liking) Red onion (1 large or two small)
Fresh Peach Salsa: I loved the combination of flavors in this salsa. It went really well with grilled pork chops. The only thing I changed was to sub lemon juice for lime and fresh parsley for cilantro due to availability.
