    The Best Broccoli of Your Life - Amateur Gourmet - from Barefoot Contessa's book, "Back to Basics." Preheat oven 425. Put broccoli on cookie sheet, and sprinkle with olive oil and kosher salt and ground pepper and 4 chopped garlic cloves. Roast in oven 20 to 25 min. until crisp-tender and lightly browned. Remove from oven and squeeze lemon juice over all and toss with lemon zest, 3Tbs. toasted pine nuts, and 1/3 cup grated Parmesan cheese. Sprinkle with 1.5 Tbs. olive oil if needed.

This is our favorite way to eat broccoli of all time! My husband says he would rather eat this than fries. I put a few Tbsp of olive oil in a ziploc with some salt and pepper and the broccoli and shake. Then spread on a cookie sheet and spread minced garlic over it and roast at 425 deg F for 20-25 minutes.

A skinny broccoli cheese soup: only 110 calories and 6g fat, but with all of the flavor of the traditional version. Got to try this.
