Last month, as a guest of The Wisconsin Milk Marketing Board and World’s Best Cheese, I had the opportunity to visit some of the crème de la crème dairy farms and creameries known nationally (as well as internationally).  One of my all-time favorite creameries is Carr Valley Creamery; I just couldn’t wait to arrive and see all of the spectacularly crafted cheeses!

Pleasant Ridge Reserve I very easily could have made this a "Mountain Cheese" mention. Instead, it's worth bringing a bit of attention to a superlative version made in Wisconsin, modeled after Beaufort, the Old World classic. Nutty, sweet, and deep, with a dynamic finish redolent of wood, meat, and brown sugar. If you love Gruyere and the like, this cheese will pretty much change your life.

The 60 from Calkins Creamery is an extraordinary cheese created for us by the inspiring Emily Bryant Montgomery.  I had  a blast visiting the Creamery in Honesdale PA–a sustainable agricultural project established on Highland Farms in the Delaware Valley. The farm was founded in 1841 by the Bryant family making it one of the oldest family farms in the area.

My Saturday Cheese Board at Sendiks in Germantown, Wi.  A combination of; Sugarbrook Mediterranean Tapenade, Salamville Bluecheese with honey, Vermeer Holland Gouda, Carr Valley Benedictine 3 milk cheese, & Busseto Dry Italian Salame.  Our crackers are Waterwheel Fine Wafers.  Fruit included fresh nectarines, a pear-apple blend and grapes.

Although not a recipe, this is my favorite cheese EVER! Sweet Grass Green Hill, a Camembert-style cheese from a dairy in South Georgia. It's better than butter.

I was introduced to a great cheese a couple of weekends ago while visiting with cousins in Atlanta. It's Green Hill cheese from Sweet Grass Dairy. Now my quest is to find some locally.
