I veganized the Pioneer Woman's cornbread (haha!) and it was pretty darn good! I used coconut milk with acv for the buttermilk - solid choice. The only thing is that I think my skillet is bigger than what she would probably recommend, so it was pretty thin. Maybe up the batter by half and adjust cooking time/temp.
