Crispy Smashed Potatoes Boil potatoes in water until completely cooked through (can poke all the way in easily). Let cool for 10min. Smash the potatoes w/ a cup, coat with olive oil and spices. Bake for another 15min on top rack, then 30min in middle rack - try this with purple potatoes

Crispy Smashed Potatoes....YUMM-O!!! Boil small red potatoes in salt water until soft, 20 to 30 minutes. Smash them on a thin layer of olive oil in pan, top with more olive oil, salt, pepper and anything else you want(I use rosemary& thyme). Then bake them at 425' on lowest rack until browned and crunchy. About 20 minutes.
