Rotel Chicken Mexican Casserole 3 split fryer breasts cooked and cubed 1 bag of tortilla chips crushed 1 can of Rotel 1 can Cream of Chicken soup 1 small can of chopped green chiles 1 lb of Velvetta or American Cheese (see comments)
French Onion Soup Casserole - Slice thinly three large sweet onions. Sautee in 2 T olive oil until lightly browned. Layer in sprayed 2 qt casserole pan with 1 c shredded Swiss cheese. In bowl whisk to blend 1 can cream of chicken soup, 2/3 c milk, 1 tsp soy sauce, fresh ground pepper. Pour over onions. Top with 8 slices buttered French bread. Bake 350 for 15 min uncovered to toast bread. Remove and push bread slices under soup. Top with 1 c shredded Swiss and bake another 15 min.
