    Perfect Summer Salad! Avocado and Grilled Corn Salad with Cilantro Vinaigrette: 5 Ears Corn grilled, 2 Avocados sprinkled with lemon juice, 2 C. Tomatoes, 1 Small onion, ¾ C. Feta crumbled, 1 ½ C. cucumber chopped small dice. Refrigerate until ready to use. Cilantro Vinaigrette 6 T. Olive oil 2 T. Sherry vinegar 1 t. Garlic powder 2 T. Fresh cilantro, minced ½ t. Salt 10 Grinds of fresh ground pepper Add all of the above ingredients in a small glass jar with a lid. Shake really well. Taste and adjust seasoning as you desire. When ready to serve salad, add the dressing and gently toss.

Memorial Day Menu: Tomato, Corn, and Avocado Salad. UPDATE: This was so good. Instead of raw corn, I grilled corn on the cob till there were char marks, cut the corn off the cob. I added red onion and tossed with lots of fresh lemon and lime juice, salt, pepper, basil. Made it the night before and it marinated beautifully.

Grilled sweet corn with lime and cayenne-- My father's favorite thing to eat in the summer at our family's lake house in upstate NY is the fresh sweet corn. Just grill, squeeze some lime and toss on a little cayenne pepper and salt. The perfect late summer treat.

Asian style corn-avocado salad Ingredients: •2 ears fresh corn, husked •1 teaspoon asian sesame oil •1 teaspoon unseasoned rice vinegar •1 tablespoon freshly squeezed lime juice •1/4 red onion, finely minced •1/2 jalapeño, finely minced •1 avocado, pitted, peeled and diced •2 tablespoons cilantro, minced •1 tablespoon toasted sesame seeds •salt and pepper to tast

avocado-lime pasta salad Made this today and the sauce is divine! I did use 3-cups of dried shell pasta since I saw how much sauce I yielded and it was still plenty of sauce. Could use that sauce on any number of things, including on a tortilla with pulled pork and red onions or on those buffalo chicken tacos that I also pinned. Yum!
