Fruity Yogurt Awesomeness. Got a craving for this today and decided to make it and share it. Ingredients: 32oz. low fat vanilla yogurt 20oz. pineapple tidbits drained (I recommend not using the “in heavy syrup” variety) 2 11oz. cans of mandarin oranges drained A handful of maraschino cherries sliced in half (I really like these, so I add more than a handful!) Shredded coconut as desired Instructions: Dump them all into a bowl, stir it up, serve it up and enjoy!
Mexican Shrimp Cocktail: 1-2 lb shelled and cooked shrimp (50-60 count), 2 large chopped tomatoes, ½ small white onion (chopped) or 2 green onions (chopped), ½ cup cilantro slightly chopped, ½ jalapeno (diced with seeds), 1 avocado (chopped), tomato juice (V8), lime juice, salt and pepper. Mix all in glass bowl and chill; serve with crackers or tortilla chips.
