Chicken Escalopes w/ Olive, Caper & Tomato Dressing. 4 large skinless chicken breasts, de-boned & Pounded, 1 cup flour with salt & pepper. Dressing: 1 cup Mediterranean DelicaciesCalamata Style Olives, pitted and roughly chopped 2 tbsp capers, rinsed & drained, 1 cup cherry tomatoes, roughly chopped 1/2 cup olive oil, juice of 1 lemon, 1/2 cup fresh chopped parsley, salt & pepper to taste
Shrimp feta mac and cheese by annieseats, via Flickr. This is fabulous, needed more cheese sauce/less pasta for a creamer outcome but it's the kind of mac & Cheese I've been looking for. Any meat could be used (or leave out), add sauteed veges for complete meal.
