(Update: SO good! But must keep cold or it falls apart.) Chewy No Bake Granola Bars - this one reminds me of a chewy fruit n nut bar, has chopped almonds, dried fruit and fiber additions like flax seeds and chia seeds (with plenty of room for switching ingredients).
2 avocados – peeled, pitted, and cut into chunks 1/2 to 1 ripe banana, peeled and cut into chunks 1 cup unsweetened almond milk 1/4 cup raw cocoa powder (or more to taste) 2 tablespoons honey or maple syrup or agave nectar (more to taste if needed. Note: if you use honey, the recipe won’t be vegan) 1 tsp vanilla extract 1 Tbsp almond butter (optional) 1/4 tsp cinnamon pinch of salt
