Barefoot and Baking: Lemon Poppy Seed Scones

Nice moist, dense bread. Great taste. I really liked it. I did make a mistake and bought plain yougart instead of lemon like the recipe calls for, but I added a couple tblsp lemon juice and it was great. Perfect amount of poppy seeds!

Mini Lemon Poppyseed Scones For the Scones: 3 cups all-purpose flour 1 cup sugar 3 tablespoons poppy seeds 1 tablespoon baking powder 1 tablespoon lemon zest 1 teaspoon kosher salt 1/2 cup + 2 tablespoons unsalted butter, chilled and cut into small pieces 1 large egg 1/4 cup fresh lemon juice 1/3 cup 10% cream For the Glaze: 1/4 cup icing sugar 1 tablespoon fresh lemon juice

In a separate bowl (or you can use a large liquid measuring cup), whisk together buttermilk, eggs, vanilla extract, lemon juice, and melted butter.  Pour the wet ingredients all at once into the dry ingredients.  Add the poppy seeds and stir to combine.  If a few lumps remain, that’s no problem.  Let the batter rest for 10 minutes while the griddle heats.
