"Donn Beach," the father of tiki culture) and Trader Vic founder Victor Bergeron lay claim to its invention. This version borrows from Beaumont-Gantt's recipe, which adds dashes of Pernod and Angostura bitters for complexity.

Mai Tai 1 oz light rum 1 oz dark rum ½ oz orange curacao ¼ oz simple syrup ½ oz orgeat syrup Juice of 1 lime Shake ingredients over ice and strain over crushed ice in a rocks glass. Garnish with a sprig of fresh mint.

Mai Tai translates as "out of this world." For summer parties on patio or deck, serve this other worldly sweet rum, Cointreau, and pineapple juice cocktail with a platter of appetizers.
