      mexican street corn- excellent flavours! Used only a few tbsp grated parm, 1 tsp chopped cilantro (all we had left). The recipe sounded like a bit of extra work than needed rubbing each ingredient into the roasted corn. I mixed up the mayo, cheese, chili, lime, and cilantro then served it at the table for people to use as they liked. Kids wouldn't touch it.

      This recipe gets its inspiration from Mexican street corn. Piping hot corn on the cob is smeared with mayonnaise and dredged with Queso or Cotija cheese, fresh cilantro, chile powder, lime and plenty of salt and pepper. -I'd replace the mayo with veganaise- I HATE mayo! And maybe leave out the chili powder (I don't like that either... maybe smokey paprika instead?)

      Side dish: Grilled corn-on-the-cob rolled in feta, sea-salt, pepper and sprinkled with cilantro.

    Sliced in small, bite sized sections for easy eating at event. Plus, mix lime with butter before grilling (not just lime on the side because they must have lime flavoring, that's what makes it)
